Every year we are reminded of the wee mythical men from the land of the Isle and the pot o’ gold at the end of the rainbow. Yes, I am talking about St. Patrick’s Day. Green is spread everywhere for all to see and you will get pinched if you are not wearing it, too! But more importantly than the Luck of Irish and the four leaf clover, what’s a holiday without food?

I have looked high and low for the perfect recipe to honor this lucky holiday. And no, it’s not Lucky Charms. What’s better than a recipe with a food Ireland is most famous for? That’s right, Potatoes! Irish Potato Farls is cooked to perfection just for St. Patty’s Day. So, if you’re a potato lover like me, dig into this recipe at full speed, but watch out for those leprechauns along the way!

Ingredients:
1.25 lbs of Potatoes (4 potatoes)
2 Teaspoons of Melted Butter
1 Cup of Flour
Half Teaspoon of Salt
4 Teaspoons of Vegetable Oil

Peel and half the potatoes and boil in water for 20 minutes or so until soft. Drain and 
then add the butter and mash thoroughly. Add the flour and salt and mix.
Divide the mixture in half and put the first half on a lightly floured surface.
Knead until flat - approx .25 inch thick. Divide into 4. Repeat the process for the
other half of the mixture. Fry/Griddle using the oil for approx 2 minutes or until
crispy brown on each side. Serve warm. Makes 8 Farls.
